Blind Tiger Brewery Announces New Polish Pilsner Now On Tap

The Blind Tiger Brewery & Restaurant in Topeka has released a new Polish Pilsner created through a collaboration among four brewers from Kansas and Colorado.

Endless Stories Polish Pilsner was developed by Blind Tiger Brewmaster and Owner John Dean; Head Brewer Alvaro Canizales; Bill Eye, brewer and owner of Bierstadt Lagerhaus in Denver; and Bill Hasse, retired brewer from The Sandlot Brewery at Coors Field in Denver.

The idea for the collaboration originated during a conversation among Dean, Eye and Hasse about brewing a style none of them had previously made. They selected a Polish Pilsner, using Polish Lubelski hops and producing the beer at 5.5% ABV.

The four brewers came together at Blind Tiger in Topeka on May 19 to brew the beer. Collectively, the group has earned more than 100 medals and awards at national and international brewing competitions.

The lager spent approximately two weeks in primary fermentation followed by more than 10 weeks of conditioning before being released.

The collaboration also reflects a longstanding practice within the craft brewing industry of brewers sharing techniques, knowledge and experience across breweries.

Blind Tiger Brewery & Restaurant has operated at 37th Street and Kansas Avenue in Topeka since 1995. The locally owned brewpub employs approximately 75 people and produces about 1,000 barrels of beer annually. Its brewing team has earned 33 medals and awards in national and international competitions.
